Suzie's Italian Style Quinces



2 quinces, peeled and rough core removed then thinly sliced
1 bottle white wine (I use chardonnay)
1/2 cup raw sugar
7 allspice (whole)
1 cinnamon stick
2 slices of lemon peel

In a medium sized saucepan bring all ingredients to the boil then simmer for an hour. Allow to cool slightly before enjoying with cream, custard or ice cream. Keep in the fridge and put on breakfast granola, yoghurt or porridge. Decorate baked Camembert with them. Enjoy!

Hint: Place quince slices in the saucepan with the wine as soon as you've chopped them as they quickly oxidize and brown if you leave them on the chopping board.
